Mosaic Patisserie is a wholesale French patisserie specialising in high-quality macarons, pastries, tarts and cakes. We supply to discerning cafés, caterers and food retailers all over Melbourne. Regional Victoria and interstate: we can ship large quantities (pallet or part-pallet). We select the best ingredients to create fine patisserie products for the premium retail and food service market. We use imported ingredients where we believe it will make a difference to the quality of the finished product. We do not use premixes or preservatives, and we aim always to achieve the best flavour without excessive sweetness or heaviness.
Guillaume Dequidt's (founder of Mosaic) journey as a pastry chef started since his childhood, working in the family catering business alongside his parents during school holidays. His father was a chef but Guillaume was only interested with the sweet range. He started an apprenticeship when he was just 16 years old with one of the finest pastry shop in the south of France. Then moved to work in Paris, London at Harrods' and Maison Blanc’’ and finally Melbourne . In Melbourne, Guillaume was head pastry chef for Laurent Bakery for 4 years . He then went into opening his own patisserie: La Tropezienne in Hawthorn in 2005. His cafe became very popular in the area, especially with the pastries and the macarons. It was so popular that he had to find a bigger kitchen to fulfill his orders and the wholesale demand for his products.
In 2011 Mosaic patisserie was created. After 2 years of trading with both businesses, Guillaume decided to move his focus solely on the wholesale side and letting go of the retail business. He is now working with his best team pastry chef's and his devoted staff to bring you some of the best pastries, cakes,tarts and macarons available on the market today!
