

Our Story
Mosaic Patisserie was born from the hands of French pastry chef Guillaume Dequidt - a lifelong artisan whose craft is rooted in tradition, precision and an enduring love for the sweet.
Raised in the south of France, Guillaume spent his school holidays working in his family’s catering kitchen, instinctively drawn to the patisserie bench. At just sixteen, he began an apprenticeship with one of the region’s most esteemed pâtisseries, before continuing his journey through Paris and London, refining his skills at iconic institutions including Harrods and Maison Blanc. Eventually, he brought his artistry to Melbourne.
In 2005, Guillaume opened La Tropezienne in Hawthorn - a charming café renowned for its exquisite pastries and signature macarons. As demand flourished, so did the need for scale. And so, in 2011, Mosaic Patisserie was established: a dedicated wholesale patisserie offering finely crafted macarons, tarts, cakes, and petit desserts to Melbourne’s leading cafés, caterers, and food retailers.
At Mosaic, we are uncompromising in our pursuit of excellence. We work with the finest ingredients and favour traditional methods over shortcuts. No premixes, no preservatives - just pure craft and restraint. Every product is balanced, elegant, and thoughtfully composed to deliver a sense of occasion with every bite.
